FACES OF WITS 👩🏽🍳🤾🏽♂️🧘🏽♂️👨🏽🏫 ................................................................................. “I remember doing a tasting of kale salad and a boy came in with Taco Bell for his lunch. He asked if he could try the salad. He loved it so much that he pushed away his Taco Bell and ate 3 bowls of kale salad (not tasting cups but full sized bowls)! It was the culmination of everything I was trying to do all year.” -Jami Bailey, WITS Chef, Washington DC
Hello July! 😎 As we move into this very warm month, it’s important we remember to protect our bodies as our skin has a very active role in our immune health. A few tips to help: 1. Try to stay out of direct sunlight during peak hours (around 10 AM to 3 PM). 2. Use a full-spectrum sunscreen if you will be outdoors during peak hours and make sure to check what's inside as there are a lot of endocrine disruptors and nano-metals present in commercial products (particularly the spray varieties). 3. Make sure you are properly hydrated while out in the sun!
You don’t need deep pockets to be generous! Check out how WITS board member @mariadaou_ got creative in giving back even when she couldn’t always donate money. FACES OF WITS 👩🏽🍳🤾🏽♂️🧘🏽♂️👨🏽🏫 ................................................................................. “As a child who was always sneaking into the kitchen, eager to be shown anything and everything about cooking, I love seeing that same spark of interest and passion in the students. That we can inspire that, while also empowering them to make the best possible choices for their health and well being. This brings so much joy to me every day." - Ana Palaez, WITS Chef, Miami-Dade

FACES OF WITS 👩🏽🍳🤾🏽♂️🧘🏽♂️👨🏽🏫 ............................................................................... “Plant science and environmental education should be more than just something students read about in a text book…it’s about sparking wonder and empowering them to make healthy decisions about food- not just because it’s good for them but because it tastes good too! For kids growing up in NYC, their local farm might be down the street and on a rooftop! Whether donating seedlings to WITS’ school gardens or participating in cooking class, one of the best feelings is to have students eat greens by the handful and ask for more!” Nicole Baum, Director of Marketing + Partnerships, Gotham Greens, NYC
Brightening this Monday with our freshly picked carrots from @bakercreekseeds in Lu Sutton’s garden. Planted at the end of April, students were so excited to see their seeds turn into fresh produce. 🌱🥕🌱
Ending the week with a special spring recipe from our Chef Partner @blueapron ! We’ve been working with Blue Apron since 2017 when they adopted four schools in the Bronx. It’s been an incredible partnership, and we are deeply grateful for their support. Below is there recipe for their Pesto Mac & Cheese! 🌿🍝🧀 Ingredients: 2 cups basil leaves 1⁄4 cup mint leaves 1⁄2 cup canned chickpeas, drained 1⁄8 cup parmesan cheese, grated, plus more for garnish 1⁄2 tsp crushed red pepper flakes 1 garlic clove, smashed 1 tsp lemon zest 2 teaspoons lemon juice (optional) 1 cup frozen peas, defrosted 6 oz fresh mozzarella, cubed 1/3 -1/2 cup olive oil, plus more for drizzling 12 oz dried or fresh pasta (any shape will do!) Method: 1. Start the Pesto: Add the basil leaves, mint, chickpeas, garlic, and a drizzle of olive oil to a food processor; pulse until chopped. 2. Yogi beans has partnered with WITS for seven years offering their classes during our Family Fitness Fun Nights as we are both passionate in fostering healthy habits in children at a young age. 🧡 If you didn’t catch our Spring Newsletter, they have shared a tip for us all! 🧘🏼♀️✨🧘🏽♂️✨ Yoga is a Mind- Body-Heart practice. Below are tips for each aspect of Yoga. Mind: Watch your thoughts! In our Yogi beans classes we practice our “I AM” mantras. Make sure the word that follows I AM is a word that makes you feel good! Body: One of the most simple and effective poses is Cat and Cow. Begin on your hands and knees. Round your back as if you were a scared cat to come into “cat” pose. Arch your back as you drop your belly to the floor for “cow” pose. These two poses are great to practice first thing in the morning to wake up your spine after a restful nights sleep. (Meows and Moo’s are optional!) Heart: Before the start of school, a child and their parent can take a moment to think of one thing that they are both grateful for. Cultivating gratitude and appreciation make for a happy heart.

FACES OF WITS 👩🏽🍳🤾🏽♂️🧘🏽♂️👨🏽🏫 ................................................................................. “We loved teaching 2nd, 3rd, and 4th graders about the journey fruit and vegetables take to get from the farm to their plate and that a little blemish or imperfection on the outside doesn’t compromise the flavor on the inside. Seeing the students ask for a second helping of salad and taste imperfect tomatoes and realize they were just as delicious as the perfect tomatoes they often see at the grocery store was amazing!” Delaney Sondag, Sustainability Coordinator at Baldor Speciality Foods, NYC
Although it’s not officially summer, warm weather is here which can leave us reaching for cold sweet beverages. It’s important we make sure to look at the back of our bottle’s label so we know what’s really inside. Chef Laurielle talks to our students about sugar overload and being mindful of reading the labels on our drinks. #feedkidsrealfood

As a successful and memorable school year comes to a close, we will be featuring favorite moments from our WITS Warriors [chefs, coaches, school leaders, students]. Stay tuned as we present: FACES OF WITS 👩🏽🍳🤾🏽♂️🧘🏽♂️👨🏽🏫 ............................................................................... “Back in the winter, I was getting the kids excited for the chili and roasted cauliflower lunch while they waited in line. One child who had never had either dish before said, “Okay I’ll try it, but I’m scared.’ Often times, kids are afraid to commit to a lunch with new items. Once he got his lunch, I sat down with him and we took a bite together on the count of 3. His face lit up and he said, ‘Oh wow, I had no idea. I thought it was going to be gross, but this is awesome!’ It’s moments like these (that happen every day) that make me so thrilled to be doing this rewarding job of introducing new veggies to kids every day through scratch-cooked recipes.” -Annie, Program Manager, D.C
