Greens Galore 🍃🥗✨ with Green Labs now in session! Leafy vegetables like kale, arugula and romaine are a great source of fiber, vitamin a, vitamin k, and antioxidants keeping our immune system strong. “Can we have the recipe?” the kids asked. Of course 😊 You can find our Lemon Honey Vinaigrette recipe below. ingredients: 3 Tbsp fresh lemon juice 1 Tbsp dijon mustard 1 Tbsp honey 1/3 cup olive oil salt and pepper to taste procedure: In a small bowl, whisk together lemon juice, mustard, and honey. Add the oil in a slow, stead stream, whisking constantly until emulsified. Season to taste with salt and pepper. Store in refrigerator. Makes one cup.

Working with our community chef partner @lot2restaurant and WITS chef @lauriellecooks to bring fresh food and cafeteria engagement to PS295 in Brooklyn. The Harissa-Carrot Slaw with pickled raisins was 🙌🏼💯💥 and so was hearing the vice principal say, “You make us feel like we are the only school you work with.” 😊

Welcoming spring with NUTRITION TIP #2 from our house nutritionist @kitchendietitian 💦🌱🌸 Spring is a season of renewal and transformation. While we might feel inspired to clean out our closets or undertake a whole-house cleaning, it’s also a good time to look inward at what we can clean up from our lifestyles. Our bodies have a built-in detoxification system comprised of our livers, gallbladder, and kidneys that work to transform any toxins (e.g. pollution in our air, not-so-great food additives, and even too much sugar or caffeine) into a form that our bodies can get rid of. Aside from limiting our consumption of processed foods, consuming lots of vegetables (especially cruciferous vegetables like broccoli, kale and cauliflower) will help to provide the liver with the B vitamins and sulfur it needs to break down the toxins we pick up in our environment. Herbs such as dandelion, ginger, and burdock (either in foods or as a tea) also go a ways toward supporting our body’s elimination pathways. But most importantly, don’t forget to be mindful of your water consumption! 💦🌱🌼

He celebrated National RD Day with his students yesterday and fully committed to the role 😄🥕Carrots are a great choice, but did you know that cooking carrots in a healthy fat can make them even more nutritious? While the carotenoids found in carrots (like Vitamin A) already play a role in reducing our risk for stroke, heart disease and certain cancers, adding even a small bit of fat during cooking, or as part of the finished dish, can support increased carotenoid absorption. #nationalnutritionmonth

Sweet potato quesadillas, spiced cauliflower “popcorn,” veggie chili, Tuscan kale salad... who wants WITS to come to their school? 🙋🏽♀️ We are teaching teachers and cafeteria teams of Washington DC public schools how to prepare these delicious, scratch-cooked meals to serve students. Mashed or roasted, any way you slice ‘em, potatoes are delicious and nutritious ☺️ Many of our schools are in Potato Labs this month serving up high levels of Vitamin C and Vitamin B6 (strong bones), and potassium (healthy heart). Don't forget - the skin is the healthiest part of the potato! Recipe below 🥔 Serves 4 - 6 ingredients: -4 large red bliss potatoes (1 1/2 pounds), cut into 8-10 wedges -3 Tbsp of vegetable or olive oil - 1 Tbsp of fresh rosemary or 1 tsp of dried rosemary -salt and pepper to taste Procedure: 1. Preheat oven to 450 F. 2. Place potatoes in a bowl, and rinse under cold water until starch is removed and water is clear. 3. Drain potatoes well and place in a bowl. 4. Toss with olive oil, salt, pepper, and rosemary. 5. Place on an oiled and heated baking sheet and put in oven. 6. Stir when bottoms of potatoes are brown. Continue to stir and cook until potatoes are tender, approximately 35 minutes. 7. Serve immediately, and enjoy
