NYC is a few weeks into Summer Meals offering FREE breakfast and lunch to anyone under 18 years old by the DOE. (No registration, documentation, or ID is required). Hello July! ๐Ÿ˜Ž As we move into this very warm month, itโ€™s important we remember to protect our bodies as our skin has a very active role in our immune health. A few tips to help: 1. Try to stay out of direct sunlight during peak hours (around 10 AM to 3 PM). 2. Use a full-spectrum sunscreen if you will be outdoors during peak hours and make sure to check what's inside as there are a lot of endocrine disruptors and nano-metals present in commercial products (particularly the spray varieties). 3. Make sure you are properly hydrated while out in the sun!

It was a beautiful day as our team held a Staff Appreciation BBQ & Picnic for the amazing staff in Camden, New Jersey! We served up a BBQ serving traditional food and vegetarian options, & for dessert, Chef Rebecca's Watermelon cake hit the spot! Ending the week with a special spring recipe from our Chef Partner @blueapron ! Weโ€™ve been working with Blue Apron since 2017 when they adopted four schools in the Bronx. Itโ€™s been an incredible partnership, and we are deeply grateful for their support. Below is there recipe for their Pesto Mac & Cheese! ๐ŸŒฟ๐Ÿ๐Ÿง€ Ingredients: 2 cups basil leaves 1โ„4 cup mint leaves 1โ„2 cup canned chickpeas, drained 1โ„8 cup parmesan cheese, grated, plus more for garnish 1โ„2 tsp crushed red pepper flakes 1 garlic clove, smashed 1 tsp lemon zest 2 teaspoons lemon juice (optional) 1 cup frozen peas, defrosted 6 oz fresh mozzarella, cubed 1/3 -1/2 cup olive oil, plus more for drizzling 12 oz dried or fresh pasta (any shape will do!) Method: 1. Start the Pesto: Add the basil leaves, mint, chickpeas, garlic, and a drizzle of olive oil to a food processor; pulse until chopped. 2. Finish the Pesto : Add the Parmesan cheese, red pepper flakes, lemon zest and juice (if using) to the food processor. Pulse until combined. With the processor running, slowly add enough olive oil through the feed tube and process until the pesto is finely pureed and thoroughly combined. Season with salt and pepper to taste. Assemble your dish : Cook your pasta per the package instructions; thoroughly drain. Transfer the pesto to a large bowl. Add your cooked pasta, defrosted peas and cubed mozzarella. Mix to combine; season with salt and pepper to taste. Garnish with Parmesan cheese. Enjoy!

Yogi beans has partnered with WITS for seven years offering their classes during our Family Fitness Fun Nights as we are both passionate in fostering healthy habits in children at a young age. ๐Ÿงก If you didnโ€™t catch our Spring Newsletter, they have shared a tip for us all! ๐Ÿง˜๐Ÿผโ€โ™€๏ธโœจ๐Ÿง˜๐Ÿฝโ€โ™‚๏ธโœจ Yoga is a Mind- Body-Heart practice. Below are tips for each aspect of Yoga. Mind: Watch your thoughts! In our Yogi beans classes we practice our โ€œI AMโ€ mantras. Make sure the word that follows I AM is a word that makes you feel good! Body: One of the most simple and effective poses is Cat and Cow. Begin on your hands and knees. Round your back as if you were a scared cat to come into โ€œcatโ€ pose. Arch your back as you drop your belly to the floor for โ€œcowโ€ pose. These two poses are great to practice first thing in the morning to wake up your spine after a restful nights sleep. (Meows and Mooโ€™s are optional!) Heart: Before the start of school, a child and their parent can take a moment to think of one thing that they are both grateful for. Cultivating gratitude and appreciation make for a happy heart.

Once he got his lunch, I sat down with him and we took a bite together on the count of 3. His face lit up and he said, โ€˜Oh wow, I had no idea. Greens Galore ๐Ÿƒ๐Ÿฅ—โœจ with Green Labs now in session! Leafy vegetables like kale, arugula and romaine are a great source of fiber, vitamin a, vitamin k, and antioxidants keeping our immune system strong. โ€œCan we have the recipe?โ€ the kids asked. Of course ๐Ÿ˜Š You can find our Lemon Honey Vinaigrette recipe below. ingredients: 3 Tbsp fresh lemon juice 1 Tbsp dijon mustard 1 Tbsp honey 1/3 cup olive oil salt and pepper to taste procedure: In a small bowl, whisk together lemon juice, mustard, and honey. Add the oil in a slow, stead stream, whisking constantly until emulsified. Season to taste with salt and pepper. Store in refrigerator. Makes one cup.
