Perfecting my rib roast technique after being disappointed with the result last Christmas, and I finally nailed it...which feels damn good. 😬 . . . (the key is to rub it all over with a very generous amount of salt and let that sit uncovered for 3 days in the refrigerator)

It’s hard for me to convey how much @haywoodstreetcongregation means to me and my family - especially @elizbutton ❤️ For those of you who haven’t heard of it, the Downtown Welcome Table is built on the assumption that food is a primary means of grace, a way to love and connect. In other words, it’s a meal that is served on real plates by an attentive wait staff of community members. Meals are served to anyone who needs them, family style. People stay, laugh, talk, and pass full plates between each other. There are no requirements or limitations around who can stay and eat. Just like at a nice restaurant or dinner at home, connections are built through the shared table. Cloth napkins, flowers on the table, and china plates help send the message to people that they deserve the best, countering the notions they encounter daily that handouts and leftovers are all they deserve. These meals are served twice weekly, and local restaurants in the area join in the effort by providing the meal once a year, cooking and serving over 400 people. Today, Dave, Mary, Laura, Brian and the companions at Haywood Street “Turned the Tables,” to treat me and other Downtown Welcome Table restaurants and participants to a beautiful meal. There is a point of intersection between the southeastern US and Spain, and right at that point you can find cured ham. I brought this @cincojotas jamón ibérico de bellota to the neighborhood series dinner at @chswineandfood last night, and basically made a jamón ibérico taco around some caviar. It went over well 😉. — Thanks to the Cinco Jotas team for helping me, @curatetapasbar and @felixmeana introduce the absolute best version of this product to the US!

But it's time to say goodbye. ________ After thoughtful consideration and five amazing years, we have made the difficult decision to close Nightbell. Our final day of service will be this Sunday, January 27th. ________ We feel that the closure is a necessary step in order for our company to grow, and @felixmeana and I are deeply grateful to those who have supported Nightbell over the years - our staff, local purveyors and farmers and the Asheville community. Guests can continue to visit us downstairs at @buttonbagels and at @curatetapasbar - we hope to share plans for the next chapter in the near future. _______ In the meantime, help us send her out with a bang! Ended our #4thofjuly family dinner with a peach, blackberry, and thyme galette. I love galettes, maybe more than pie because I am flaky crust kinda girl and the crust:filling ratio is perfect! I also love them because no matter how you fold them or throw them together they always look beautiful....next I want to turn a classic southern tomato pie into a galette.
