🍆BAIGAN BHARTA🍆Literally translated as Eggplant Mishmash, this Indian classic is a crowd-pleaser across all ages, with each family's version slightly unique, and always delicious. My fam's recipe is below. I hope you and your kids love it! — RECIPE 🍆Rub 2 medium eggplants with avocado oil 🍆Roast at 425F for 30-40 min until fork tender. Allow it to cool, peel the skin (Save for another use or eat as is. It can be slightly bitter but still yummy). Mash the flesh with a fork and set aside 🍆Sautée 1 chopped onion, a knob finely chopped ginger and 3 crushed garlic cloves with 1 tsp turmeric in 2 tbsp avocado or coconut oil until softened, 3-5 minutes 🍆Add 1/2 chopped green bell pepper and 2 large chopped tomatoes and cook for 10 minutes 🍆Stir in 2 tsp ground cumin, 1 tsp ground coriander, and pinch cayenne 🍆Add in the roasted and mashed eggplant and cook for 10 more minutes. Fennel is a flowering plant in the parsley and carrot family. The entire plant can be consumed - bulb, stem, fronds, seeds and pollen (super expensive!) — Fennel is sometimes confused with anise whose seeds are smaller and stronger. — Both fennel and anise contain a compound called anethole which imparts their characteristic licorice flavor. — Fennel seeds (you’ve probably seen them at the exit at an Indian restaurant😉) are sweet and herbaceous with licorice notes. — Fennel is often used in Chinese Five Spice and Garam Masala blends and sometimes used in spiced chai #yum — My favorite fennel pairings are roast potatoes, Greek salad, okra, chicken, fish, lamb, steak, tea and so on. White beans with everything I bought at the farmers market y’day - cherry toms, cucs, radishes, jalapeño, Thai basil, celery, perilla leaves, shallots. Tossed with a hit of champagne vinegar, olive oil, salt, pepper and crushed garlic. Do you know that people who live in the #bluezones and have long and healthy lifespans eat beans and legumes on the regular? If you find them hard to digest try adding spices like cumin, ginger and fennel and start with small amounts but eliminating them all together is a bit of a shame IMO. I know it may sound strange but pretty much the only thing I won’t eat is cooked carrots 🙈😬 — But then I made these smoked paprika, sumac, cayenne and @justdatesyrup roasted carrots with a garlicky yogurt drizzle, more sumac and fresh mint and they knocked my cooked carrot hating socks off and I think you will dig them too 🥰 — RECIPE 🥕 Whisk together 1 tbsp avocado oil, 1 tbsp @justdatesyrup or maple syrup, 1 tsp smoked paprika, 1/2 tsp sumac, salt, pepper and a pinch of cayenne in a small bowl. 🥕 Toss carrots with the marinade and roast at 400F for about 30 minutes. 🥕While the carrots cool, whisk together 2 tbsp Greek yogurt, 1/2 tsp olive oil, salt, pepper and a pinch garlic powder. 🥕Drizzle over the roasted carrots. Dear Lentils, I will happily eat a bowlful of your delicious goodness every single day. ❤️ RECIPE 💥Cook 1 cup of rinsed, soaked and drained red lentils with water in a pressure cooker or regular pot with a lid on medium-low flame until fully dissolved. 💥Prepare your seasoning (tadka in India) by warming 1 tbsp oil or ghee in a small skillet. 💥Add 1/4 tsp cumin seeds and allow them to sizzle for about 60 seconds. 🔥Moqueca🔥A Brazilian seafood stew that screams deliciousness and is pretty straightforward to whip up. What are you waiting for? ☺️🥰🔥 RECIPE 🔥Squeeze 1.25 lb cubed firm fish like halibut with lime juice and set aside 🔥Warm 1 tbsp avocado or coconut oil in a pot for which you have a lid on a medium flame 🔥Add 3 minced garlic cloves and sauté for a minute until fragrant 🔥Add 2 cups of strained tomatoes and 1 can of coconut milk and mix well until warmed through 🔥Add 1 onion, 1 orange and 1 yellow pepper all cut into rings and salt and pepper 🔥Cover and cook on a low flame for 7-10 minutes until the veggies are softened 🔥Add 1.25 lb cubed firm fish like halibut and cover and cook for about 5 minutes 🔥Add 1 lb shrimp (you can also add squid) and cover and cook on a low flame for 3-5 minutes until the shrimp are cooked through 🔥Adjust salt to taste. What I’m craving post travel #nojoke 🌿🍃🌱🍃🌱 — There used to be a time when I craved sugar sugar sugar but when you shift your diet towards whole, real foods closer to the earth you feed the right bugs in your gut and balance your hormones in a way that shifts your craving patterns #truth Also relevant for those of us raising kiddos 💕💕 — This also raises the question as to WHO is really craving what you’re craving? Remember, bitter foods are actually incredibly beneficial for your gut health, digestive enzyme production, and your microbiome so you may have to just learn to like them. You can start by blanching the greens to remove some bitterness and then work yourself up to a full steam, ‘bring on the bitter’ situation. What is health? — There was a time when I thought health was the mere absence of ‘disease’. — There was also a time when I thought health was being a certain ‘size’, eating certain kids of foods, and looking a certain way. — I’ve lived, I’ve learned, I’ve grown. Now health to me is a state where I love myself so dang much that I nourish myself with real, whole food (and the occasional french fry if it feels right #balance), move my body as a celebration, nurture deep connections, sleep like my life depends on it to recharge and rejuvenate, create and contribute from a place of love (over fear), and recognize that I am a part of the whole and connected to all of it. I know that if I do all of that from a place of genuine joy, my body will settle into its natural state of bliss and balance. “What’s in a typical Indian spice box”?
