This journey has not been a solo one, so many characters have always filled my life and been an inspiration to me creatively. The women that share my dna and across my beautiful country of Mexico are the lighthouse I need when I feel tired.I know what we’re doing is different and in San Diego different doesn’t have longevity but I believe wholeheartedly in this restaurant and in constant evolutionary growth. I am a professional student at life and take every criticism and grow from it, even inviting if most times. I wouldn’t be where I am if I didn’t have the proverbial shin bruising that life’s given me. These last two years have been amazing, I don’t think of @eljardin.sd as a business 100% of the time, It is a living organism and it has to be taken care of as such, business is black and white mostly, people aren’t. It’s not an easy math equation but one day I hope to master it. Thank you to @eater And everyone that thinks we’re doing something worthy of note. Such a great dinner last night @beasttoronto with the Man, the Myth, the Legend @scottvivian🙌🏼 I (And Nate!) love Canada and they loveeee Mexican food so it was awesome to do the same food we do @eljardin.sd without holding back on acid/salt/fire and it was my first time in Toronto so I can now check off another Canadian city I’ve cooked in🤙🏽 felt great to have @paolaitzel here too and showing her a bit of Canada and it’s awesome people. Now back to regularly scheduled programming, time to make Winter menu changes.
These perfect imperfections make me smile. Some days we grind yellow corn and some days we grind blue or pink or white. It’s like answering who’s my favorite kid. Every corn has it’s complexities and how it reacts to environmental changes, I love learning what those are and sharing with our customers that we buy non gmo corn straight from the growers in Mexico thanks to @tamoamx Tamoa gives us the genetic makeup of each corn variety and what moisture and Cal is necessary for it to be perfect for tortillas. Alongside the growers name and location, for each bag ! Each bite of these tortillas ( and cookies/atoles) is centuries of history and I’m so proud to push to bring our MVP grinder and this beautiful ingredient to San Diego.

Flashback to 2016 when El Jardín was just in it’s infancy phase for @johansadventures then I came along to stir it up with my dream of giving people of San Diego a different piece of Mexico. Mind you not everyone gets it, a lot of people don’t in fact. But I will continue to push forward with my team because we owe it to our families that sacrificed so much to get us here and to have the ability to chase our dreams. This is our dream, when people ask “How do you do it?”, my answer is always, I was not given another option and the one constant in my life has been feeding people. Obsessed with bees and love that the garden is full of them!! Here is a piece of Melipona honeycomb from Yucatán, featured on @eljardin.sd opening cheese plate. Paired with @lacavademarcelo cheeses. I cannot describe how insane this honey is besides “electric” When I made a Beecheii flan with cheese crisps my mind was literally blow with full of possibilities. In the Yucatan Peninsula, stingless bee culture dates from pre-Hispanic times. At the height of the Mayan civilization, cultivation of stingless bees reached a level of sophistication comparable to the cultivation of Apis mellifera in Europe at the same time. Honey extracted from hives was used in religious ceremonies, as food and medicine. Many of the healing properties attributed to honey are the basis for some treatments of traditional medicine around the world, reaching used in the treatment of open wounds, in the treatment of ulcers and sores on the skin also the ancient Maya used Melipona beecheii honey to accelerate the healing of wounds and burns.
