This low intervention wine is made with intention from start to finish as the winemakers plant and harvest according to the moon, they don’t spray any chemicals in the vineyard, and they even play classical music for the wine to incite a peaceful fermentation process. This is Evan K. He's our main prep cook and his morning kitchen shifts produce some of our favorite house-made charcuterie items -- like this pâte de campagne pictured above. He is passionate and curious; and, his love of farm-to-restaurant relationships along with a degree in Environmental Science has made him our (unofficial) Sustainability Coordinator, starting a small composting initiative in the kitchen and educating the staff on waste management. This week, Evan is excited to share one of his new favorite wines: Jean Foillard Morgon Côte du Py 2016: "I instantly became a Foillard fanboy when I got to try a few cuvées at a staff party. I am new to exploring wine, but these remind me of the wild fermented Coolship beers of one of my favorite breweries, Allagash. This wine has notes of red and dark fruit, rose petals, and a quality that keeps me coming back again and again. Jean Foillard’s commitment to organic agriculture and older techniques also resonate with my past in agriculture." We're pretty excited about our Spanish wine bar take over next week! So, we’re getting the party started a early by featuring a flight of unique, delicious wines tonight that give a glimpse into the styles of Spanish wine that we're all about right now. Viña Somoza's As2 Ladieras comes from two steep vineyards in Valdeorras. This dry, Galician wine, made from a grape called Godello, is racy, minerally, and powerful-- it's like: briney, ocean air at the beach meets rainstorm on the streets of New York City. It's the kind of wine we reach for when ordering a tray of oysters and salty, ham. Alongside Javier Garcia's white, @bgalbraith29 has paired a unique pinot noir from Marenas, a bodega that whole-heartedly believes great wine begins in the vineyard. These place-driven wines are zippy and fun-- it just might transport you to late night karaoke in Barcelona. Vivacious. Unapologetic. Unexpected. We’re also excited to represent a young Rioja from Juan Peñagaricano whose job selling winery equipment led to a career in winemaking. His curiosity and time spent working with some of the region's most traditional winemakers has inspired a love for the classic stuff. This is modern winemaking with a nod to tradition: rustic, charming, and simply satisifying. This vibrant and youthful tempranillo might make you fall in love with Rioja all over again. A perk of the wine & food business is that we constantly are eating and drinking and thinking about flavor, but it IS work. It’s how we learn. Staff tasting sessions are imperative, but a rarely revealed aspect of the our industry. To the outsiders eye this may look like nothing but a fun, messy meal. And although we have fun and get messy, there is so much more. We learn the ins and outs of the inception and processes of each dish. There’s plenty of feed back, which is welcomed. Constant discussions on flavors and wine pairings, which at times may lead to a disagreement, other times a brand new discovery. We are ALWAYS taking notes! This is how we ensure we can curate an experience and deliver a meal to our guests at Dedalus at our utmost best.

We’re definitely going to!!! Wine Notes for today’s tasting: Vinos Atlanticos - coastal wines from Tenarife, Almansa, and Ribeira Sacra fashioned from fruit grown in extreme conditions. Conditions so difficult the vineyards remained derelict for years. Until this collective of four obsessed young winemakers found them. Where others saw impossibility, Envínate ('wine yourself') sees perfection. Few Spanish wines - if any - have captured the collective spirit of our time the way the wines of Envínate do. Handcrafted, minimal intervention, clean, precise, gorgeous... From the food-obsessed to Master Sommeliers, natural wine nerds, and the wine press, if Instagram is any indication it seems like every tastemaker in the world is chasing down these bottles. The wines are really well priced - with a handful of them under 20 bucks. Affordability, scarcity, popularity - I'm sure you know what that means. They're not easy to find.

She has a great Instagram feed and really knows how to drink “bomb-ass wines”. Krista Scruggs is our hero - she’s the winemaker and owner of Zafa Wines and was just named to the Wine Enthusiast’s 40 Under 40 Tastemakers of 2018 List. Sometimes he really knows how to get a wine’s good side 😉 Wine Notes: This Chenin Blanc from Mathieu Vallée is hands-down one of the most excellent expressions we have had the pleasure of experiencing. It hits the palate with such focus and cut, like a razor blade cutting through ripe lemon and chamomile flowers. A dream for any Chenin lover, a revelation to those who have yet to discover. Small production, biodynamic Chenin Blanc at this price and actually available is a combination we don’t see often. We have just a couple bottles of this left. Stop into the shop as this vintage is almost completely out the door.

This wine is perfect for the freaky-deaky natural wine lover. Cherries and granite pluck a steady bass line in this unfiltered and funky little glugger. Spicy notes of earth add life to the red cherry and pomegranite fruit, all pulled tight by a mineral core.
