Today’s #cheesechurch is brought to us by our very own @cheesestash who cracked these beautiful wheels for us in the shop yesterday. All from @neals_yard_dairy, these cheeses represent some of the best the U.K. has to offer and we’re proud and thrilled to have them at Dedalus. Come on by and ask for a taste of these gorgeous, iconic cheeses!
The rosé is chilled and the music is on! Head on over anytime—-at 2pm, the party moves inside to our air conditioned wine bar 🎉
We have so much coming up at Dedalus over the next few days, from our weekly patio party and dollar oysters (until they run out) tonight to Monday’s takeover with Mamajuana Café for incredible Dominican tapas paired with some of our favorite thirst quenching wines. Kermit Lynch takeover starts NOW! Come between now and 10pm to taste our Vermont rep and friend @eestrausser’s favorites from her portfolio. All of these wines are small-production and hard to find—some of them haven’t been in Vermont in years. From OG grower champagne to Corsican stunners to a 2012 Breton mag, the good stuff is HERE and ready for your enjoyment 🥂 Come drink some tasty treasures with us!
As @yourcheesefriend likes to say, “butter is the best cheese” and oh boy is this butter wonderful. Made with water buffalo milk, this stark white (because of how water buffalo process beta carotene or that stuff that makes your carrots orange and your grass-fed cow’s milk cheese yellow 🤓) little beauty tastes sweeter and more hazelnutty than your typical butter and would be lovely on whole grain toast either solo or with some tapenade if you’re feelin’ fancy. Come try this special treat today! 🐃 (photo by our resident cheese queen @boardinvermont)
Happy Bastille Day! @chefmixsomm is prepping for our Grand Aioli party, and we can’t wait to host you! Come between 4-10pm to eat delicious local organic produce with homemade aioli and wash it all down with Provençal rosé. That's an order 👨🍳 🇫🇷

After great deliberation, @bgalbraith29 has settled on the funnest of the fun weekend wines to pour for you tonight at our patio party, from now until 10pm. Delicious wine, dollar oysters, and all the fun. Be there!
Join us on Sunday as we celebrate Bastille Day with a Provence-style feast! The Grand Aioli is a celebration of summer's bounty, all centered around an aioli, referred to as "the butter of Provence." This garlicky gorgeousness is served alongside a spread of the seasonal vegetables from local farms and plenty of rosé, of course! Reservations recommended, but not required.
If there’s anything better than a Friday patio party, it’s a Friday patio party with dollar oysters! Come pregame with us before you head to the @artsriot truck stop (or wherever your weekend is taking you) with $1 oysters, cold wine and beer, and a real fun crowd starting at 4pm. We can’t wait to see you there!

Chris’ pick of the week: Domaine du Bagnol Cassis Rose 2018. This low intervention wine is made with intention from start to finish as the winemakers plant and harvest according to the moon, they don’t spray any chemicals in the vineyard, and they even play classical music for the wine to incite a peaceful fermentation process. Come take home this juicy, garrigue laden rosé or have a glass in the wine bar!
Today we go #backtowork with @eeejay29! Ethan makes wine under the moniker Iapetus, a brain child ten years in the making. It sure was worth the wait! This thoughtful and creative process makes a damn good wine and we’re proud to have Ethan at Crush on Pine! Come by and meet the winemaker himself! This is Evan K. He's our main prep cook and his morning kitchen shifts produce some of our favorite house-made charcuterie items -- like this pâte de campagne pictured above. He is passionate and curious; and, his love of farm-to-restaurant relationships along with a degree in Environmental Science has made him our (unofficial) Sustainability Coordinator, starting a small composting initiative in the kitchen and educating the staff on waste management. This week, Evan is excited to share one of his new favorite wines: Jean Foillard Morgon Côte du Py 2016: "I instantly became a Foillard fanboy when I got to try a few cuvées at a staff party. I am new to exploring wine, but these remind me of the wild fermented Coolship beers of one of my favorite breweries, Allagash. This wine has notes of red and dark fruit, rose petals, and a quality that keeps me coming back again and again. Jean Foillard’s commitment to organic agriculture and older techniques also resonate with my past in agriculture." Join us in the wine bar this Friday 2/8, from 4 to 10 pm, to taste this legendary wine from Beaujolais while it lasts. Hurry because this bottle won't last long! #HalfJeriFridays #FridayMagnums

Nights like these are what we love. We have such immense gratitude for everyone that’s part of this growing community. Fable Farm said it beautifully… Repost @fablefarm: Cider and Cheese Tango in the back hall of @dedaluswine shop. Still glowing from an authentic and intimate night of gathering with community in exploration of our aged ciders and aged cheeses from around the world. Thank you Ashley @scarletzig for your grounded presence and flowing wisdom as our cheese guide. Joined by team @hotelvermont and a surprise visit from @kristakscruggs and @katecartwrite made for a lovely discussion of fermentation, terroir, authenticity, and the path of least resistance. For anyone that missed out on this class, here are a few of our favorite pairings. We encourage you to try them at home. 💛 Emination & Lakes Edge Fluxion III & Delice de Bourgogne Vinous Venus & Mendi Ardi Gasna
This is Maria. She is one of our line cooks. She brings the girl power to our kitchen. She studied at the University of Gastronomic Sciences in Bra, Italy, makes a mean curry, and fell in love with cooking through sharing food with her large family growing up. She also has a thing for rosé, so this week she's gravitated towards one of our favorites: Clos Sainte-Magdeleine Rosé from Cassis, France: "it's dry, it's fruit-forward, it's easy to sip. Basically, it's got everything I want." Simply put, this wine is undeniably delicious. Come see for yourself. Grab a glass this Friday. 4 - 10PM. In the Wine Bar. While it lasts! #HalfJeriFridays #FridayMagnums
We’ve got game day on our minds. Who’s bringing the corn nuts, cheese and charcuterie?! 🤤 Platters available. Pre-order yours today. PC: @cheesestash
We're pretty excited about our Spanish wine bar take over next week! So, we’re getting the party started a early by featuring a flight of unique, delicious wines tonight that give a glimpse into the styles of Spanish wine that we're all about right now. Viña Somoza's As2 Ladieras comes from two steep vineyards in Valdeorras. This dry, Galician wine, made from a grape called Godello, is racy, minerally, and powerful-- it's like: briney, ocean air at the beach meets rainstorm on the streets of New York City. It's the kind of wine we reach for when ordering a tray of oysters and salty, ham. Alongside Javier Garcia's white, @bgalbraith29 has paired a unique pinot noir from Marenas, a bodega that whole-heartedly believes great wine begins in the vineyard. These place-driven wines are zippy and fun-- it just might transport you to late night karaoke in Barcelona. Vivacious. Unapologetic. Unexpected. We’re also excited to represent a young Rioja from Juan Peñagaricano whose job selling winery equipment led to a career in winemaking. His curiosity and time spent working with some of the region's most traditional winemakers has inspired a love for the classic stuff. This is modern winemaking with a nod to tradition: rustic, charming, and simply satisifying. This vibrant and youthful tempranillo might make you fall in love with Rioja all over again. Stop by from 4-10PM and let these wines transport you like they’ve transported us. Featured Wines: Viña Somoza As2 Ladieras 2016; Marenas Casilla las Flores 2016; Akutain Rioja Alta Cosecha 2016.
A perk of the wine & food business is that we constantly are eating and drinking and thinking about flavor, but it IS work. It’s how we learn. Staff tasting sessions are imperative, but a rarely revealed aspect of the our industry. To the outsiders eye this may look like nothing but a fun, messy meal. And although we have fun and get messy, there is so much more. We learn the ins and outs of the inception and processes of each dish. There’s plenty of feed back, which is welcomed. Constant discussions on flavors and wine pairings, which at times may lead to a disagreement, other times a brand new discovery. We are ALWAYS taking notes! This is how we ensure we can curate an experience and deliver a meal to our guests at Dedalus at our utmost best.
Cozying up and enjoying wine and food with friends never gets old.
Today from 4-7PM join us for our free wine tasting! There’s some serious business happening in Chianti. Monteraponi, Geggiano, and Felsina are setting a really high bar. Their work captures the Tuscan sun and turns it into enveloping, food loving wines that really buck the old conceptions. Deep, powerful wines with sweet, ripe red and black fruit, and herbaceous high notes, handcrafted by small family wineries. If that sounds like your kinda wine then this is your kinda tasting. We’re going to talk a little bit about what makes Chianti a special growing region and why these producers are standouts. You’ll get to try top-flight wines and buy the ones that really hit the spot. Come in and check it out! 🍇💥🍷
@fablefarm...from the whole crew here at Dedalus, cheers on making the pages of @bonappetitmag! 🥂🎉 Posting the link to the article in our bio today for everyone to read. 😃 @bonappetitmag, well done on featuring an amazing producer and, even more so, the stellar people behind it. 👏👏👏
Now and forever, we are in love with Alpha Tolman from Vermont’s own The Cellars at Jasper Hill. This nutty and savory Alpine Cheese is a best seller for good reason. It's perfect for everything from boards to cooking. We’re so fortunate to be able to bring products like this to our customers.
