Any adjustments that need to be made bc of temperature changes, etc. We’re a small restaurant who could easily buy some of the amazing bread available in NYC, but we take a lot of pride in baking it in house. It’s a routine I look forward to every time I walk in the door. These are both naturally leavened and both have freshly mulled grains incorporated into the dough.” #alwayslearning #alwayspushing
