I was working behind-the-scenes today @neimansnyc with photographer @ellensilverman to capture chef @jroost beautiful dishes at the restaurant The Zodiac. This one is a cauliflower risotto with peas and apple blossoms. I’ve loved watching all of the different areas come together over the last couple of days—mannequins going from naked to dressed, staff in training sessions, major art pieces rolling by on trolleys, ‘testing’ popovers as @kgarv58 adjusts the recipe to #nyc. The store opens on March 15.
@wexlersdeli in Santa Monica I veered from the revered smoked fish and pastrami and got a ... beef burger. It was insanely good: smashed patty, pastrami bacon (you could stop reading right here because it’s the best thing ever. Crispy and fatty and I can’t believe I didn’t know it existed), Swiss cheese, Russian dressing. It was a drippy mess of amazingness with a squishy bun to keep it all in place. This “roasted duck crispy rice” dish @majordomola is one of my favorites from 5 days of eating in LA. The crispy rice, which is usually scraped from the bottom of a hot pan, is inverted here. Crunchy side slyly facing up, a serene surface for presenting the duck breast. And then the servers’ spoons crack the peace and twist the juicy pink slices of duck and crackling and cooked rice and citrus and turnips into a happy chaos. I kept diving in for the crunchy bits combined with the meat. “I’ve never learned how to make pasta from a man. It’s always from women. Every pasta shape on my menu @felixlosangeles I learned by doing it, sitting alongside a woman,” says chef @evanfunke . Evan is a bald, broad-shouldered, book-stack of a man, with a deep reverence for handmade pasta. He studied with one of the world masters, @vsb_bologna Alessandra Spisni, founder of La Vecchia Scuola Bolognese and brought the lessons back to his pasta lab. At dinner, I got to try pastas I’d never had before...including Tortellacci al Squaquerone, burro e salvia. Which is like a larger-than-usual tortellini with the creamiest cheese filling, in a brown butter and sage sauce. Evan provided a deeper, more satisfying explanation: “Tortellacci is the lesser known of 4 size variations of the typical Bolognese shape. From smallest to largest: tortellini, tortelloni, balanzoni (green pasta) and tortellacci. Tiny, round, juicy, partial-skinned green jade tomatoes and crunchy Persian cucumbers are place on a pool of gwaimei vinaigrette. I almost didn’t get this dish @nightshadela because I wasn’t sure that a tomato and cucumber could show off @meilin21 ‘s incredible skill. I was seriously wrong. The contrasting textures were great but it was that dressing—nutty, with a little heat and acid—that made the dish sublime. It was also beautiful (not sure my photo does it justice) as are so many other items on the menu. For example, the sheer radish round tile roof on top of hamachi in a deep bowl with a well of radish water. And the mandarin ice shaped like thin half-globes on almond sorbet.
@takeshisushiny has a mind-blowingly delicious $45 8-piece lunch—The Special. I haven’t been to the full range of fabulous, exorbitantly-priced omakase places, but my meal here was everything I could ask for. From the warmed, seasoned rice to the pristine fish, the meal was flawless. The chef’s story is also great: Takeshi Sato came to NY to pursue rock’n’roll and boxing but ended up becoming a sushi master. The restaurant is just one small sushi counter. Maybe 10 seats? So Tokyo. Lmk if you have an fantastic sushi spot I should check out!
It's fair to say that Jody Adams, a super star chef in Boston, and I have a lot in common. Not the super star chef part—but other things. We both went to Brown University, just a couple of years apart. We both relatively recently left brands we loved after more than 20 years at the helm—she at the award-winning Mediterranean restaurant @rialto_cambridge and me at @foodandwine. We both have struggled with cancer in pretty profound and personal ways. So when @Jodyadams came into the studio @heritage_radio we had a lot to discuss: love, loss, grief, resilience. "When I left Rialto," says Jody, "I lost an identity and a community and a home. I was really floating. I hit a dark place...my sister got very sick the year I closed Rialto, and she was failing through the spring and we lost her in April." While pushing through, Adams learned important lessons in therapy, including, "Give grief the respect it deserves." Two and a half years later, Adams is feeling back to herself, running several restaurants including @salonikigreek, cycling 200 miles for cancer research, and this spring hosting a cycling tour. At this moment of assessment, on the eve of a new year when so many of us tally our accomplishments for the past year, I am sharing what #warrenbuffett says his measure of success is “Do the people you care about love you back?” As I think about 2018 with this in mind, it’s been one of the most successful years ever. Sisters Michelle and Suzanne Rousseau, authors of “Provisions: The Roots of Caribbean Cooking” have a great recipe for fritters, above, in their vegetarian cookbook. I like pretty much anything fried but these guys take it to another level. Says Suzanne: “Fritters feel like home. They are an easy snack & comfort food made with a variety of local ingredients like pumpkin fitters, banana fritters, cornmeal fritters, coco fritters, herring fritters, dasheen fritters, conch/fish/lobster fritters, even breadfruit fritters exist, so you get the vibe.” Indeed! When Suzanne and Michelle came to my apartment to record @speakingbroadly we discovered we shared more than the love of fried food. Our grandmothers—mine a Jew in Westchester, theirs a matriarch in Jamaica—both used the same Spode china. I’d set out biscuits on one of my grandmother’s plates. I wasn’t the philosopher in the corner who had rich parents. I was the fat kid who wasn’t a huge success. but when I entered the kitchen, everything that had been incomprehensible suddenly made sense. All of a sudden curiosity arrived@ *On editing the book: 249. That’s the number of dishes I’ve taken photos of since I bought my camera and they were all in the book. Then when you see them all together, it’s like taking your clothes off and standing in the brightest light and the most honest mirror and looking at yourself. You see all the flaws. You see you. All the little things, like I don’t do quenelles, I flatten them. My love for nasturtium leaves (Image above: Brussels Sprouts with Gooseberries & Nasturtium). And you need to choose what to put in the final book so it isn’t too big . @* On Rage: I’ve had an ongoing battle with endives. And then all of a sudden, one day, you figure it out. And therefore endive (image 2:Endive with Yellow Carrots & Buckwheat) is in the book’s chapter, “Rage." It isn’t rage toward the product, it’s rage toward myself. I foremost look at myself as a craftsmen. I get disappointed with myself if I see that other people have the ability to understand an ingredient and I can’t. @* On Going with the Flow: I look at the artichoke, and it wants to oxidize. It’s telling me what it wants. So instead of going against it, I say, let’s go along. We thinly slice the artichoke on the mandoline and then we deep fry them so they become crisp. My grandfather lost all his money in the Great Depression. It was a change in fortune that marked my adored father for the rest of his life. It influenced his decisions, but never stopped him. So how does this story about my father relate to an image of an ice cream cone? It isn't some meta connection to my childhood. Instead, the cone is from @saltandstraw, the provocative ice cream shop launched by Kim Malek, whose father's business went bankrupt while she was in college, vastly changing her circumstances. Uncomfortable. Vulnerable. Isolated. That's what chef Jenny Dorsey is trying to make guests feel as diners at her events. At her most recent pop up, "Asian in America", she served the dish above comprised of Ngo Om scented sweetbreads, a chrysanthemum "maze", celtuce, beech mushrooms, Shanghai sweet & sour sauce, shrimp & chive rice sheet. Titled "Model Minority," it was accompanied by a VR experience and a poem which alludes to her feelings of fear and resentment. "I hide everything under a rice sheet. It's slippery texture some call disgusting encapsulates so much of what I like about myself but I'm too afraid to admit...In the end being Asian-American is being in a maze, a question about a hyphen, a contradiction, all bound up tightly in a feeling of growing up somewhere and never belonging." You’ve got to love a subterranean bar like @undercote where the marble tables have strategically placed slots of bright light that can illuminate your drink. The one here is Rain. It’s spectacularly tasty with gin, pear, lemon juice, shiso leaf and ginger. The walls of the darkened room are also glowing and growing with plant installations. The place feels moody and modern—Museum of Natural History diaromas meets Mad Men style. And I loved the snacks—a stack of crispy-chewy rice sticks with sweet chile sauce on a short skewer. I will always remember the blue sky, captured here. I was at home with my one year old daughter on the Upper West Side when the towers fell. Out my window, it looked like the perfect day. Clear and bright. Just a few miles away, the blue sky was blasted with smoke, debris, bodies. The day reminds me of the impossibly short distance between safety and danger. What a heartbreaking day with the death of @the_thejgold. His role in democratizing food has been profound. He appreciated the taco as much as (or more than) the tasting menu. He celebrated the people making the food. He was intrepid, honest, sincere, and just so kind. All my love goes out to his wife Laurie and kids Isabel and Leon who were his everything. And to the city of LA which has lost its culinary North Star.
As night falls on the dock @lukeslobster Tenants Harbor, Maine, @merrittinmaine piled steaming seaweed on a brown paper runner and then hauled a gigantic pot filled with new shell lobster, sweet steamers, new potatoes, and corn from cooktop to table. She lifted the pot and shook out all the contents and, just like that, served up a gorgeous Fisherman’s Feed. Thank you for the feast @lobsterfrommaine !
Gutted by the shocking news of @Bourdain ‘s death. Tony was such a loveable and intense set of contradictions. He was tough, ready to get in a fight for what he believed and had the biggest, softest heart. He had impeccable gut instincts and a towering, almost intimidating intelligence and curiosity. His work manifests those extraordinary qualities and used them to make change, bringing the world to us to understand it better. We all now need to continue what he began, honor his legacy. My heart goes out to his family. RIP Tony. Deepest condolences to his family.
Truth: I didn’t eat any of those burgers in DC this morning. They looked amazing (and indeed were my favorites at that cute counter) but I was late for the train! So when I got back to NYC I ran to @diginn for this refreshing bowl with straight-from-the-farm crunchy cucumbers and snap peas!!
