There are finger sandwiches (both meat and veggie), seasonal salads, fruit pots, pork pies and quiche made using a recipe our head pastry chef found years ago in an old Bavarian cookbook (spoiler alert: it calls for A LOT of cream). Instantly recognisable, enoki mushrooms (also known as snow puffs) have long, slender stems and petite, convex caps. They’re native to Japan and pretty special in the fungi world on account of their mild flavour and delicate, crunchy texture. These little clusters are versatile, too. When sautéed (as seen in this Persian rice; swipe left) they keep their bite, adding texture, while in a soup or broth they become silky-smooth. The Bakewell tart is a British classic, but it’s something of an accidental hero. The story goes that, in 1820, the landlady of the White Horse Inn in Bakewell left a recipe for her cook to make a jam tart with an almond pastry base – but instead of adding the almonds to the pastry, the cook spread them on top of the jam.
