When a Buck Fifty 🌭 is ‘Priceless’!... It’s not just a great Dog, they remind me of my Dad. One of his FAVorite things was the $1.50 Costco Dog. He passed away a few years ago due to Parkinson’s, yet memories of him are with me every day. I’ll never forget this story... Quite often he would take all of his buyers, mgrs & reps out for amazing business 🍸 lunches. One day he asked everybody to get in their cars and follow him for the best lunch they’d ever have. They followed w/ hungry anticipation. I can only image the look on their faces when they pulled up to a giant food warehouse store ! But, there they were, in 3 piece suits, ties thrown over the shoulder, standing at tables in front of bustling Costco, devouring the buck fifty dogs, sipping sodas and having the best business lunch they’d ever had !... I even had 75 warm Costco 🌭s hand delivered to his memorial celebration. Soooo, when you see me posting one too many Costco Dogs ?... They mean much more to me than just a great Hot Dog. Salmon Crudo w/ fresh Basil Olive Oil 🍃, spicy red peppers, flake salt & lemon... Love this bright simple combo w/ that little pepper heat n’ savory salt crunch. Perfect for a warm sunny summer day. Hope you all had a great one☀️ - The Basil Oil🍃... so easy and such a great add to any/everything. I’ve posted this simple how-to somewhere before, but here you go. In a nutshell... blanch a handful of basil leaves in salted boiling water. Just a few seconds will do. Strain and toss into an ice water bath. Dry completely. In a small blender (I use a bullet for small batches) add ev olive oil, start w/ about 1/3 cup (depending on how much basil you have), add basil and good pinch of kosher salt. Blend ‘til smooth. Taste for seasoning. Done ! It’s a beautiful day for a Double Wagyu EXtra Cheese on toasty soft grilled brioche. Simple, no frills, loads of cheese, pink inside squishy bun delicious ! Funny, I actually bought the ruffly lettuce & tomato to attempt a Shake Shack smash burger hack, but it’s such a nice sunny day, I had to get outside and grill. Seared Duck Breast w/ rosemary & white wine pan drippings... Who else loves duck ?... I haven’t cooked it in a while, so I thought I’d practice with a couple of nice fatty breasts. They were juicy tender pink inside and I ‘had’ beautiful crispy skin, but lost it on the flip and added the wine. Note to self... don’t try to get that action-jackson ‘steamy’ deglaze video while the duck is still in the pan, lol. I sure missed the crispy skin, but they were just as delicious. Snappy Landjäger Sausages & Spicy Blue w/ a fresh block of local honeycomb and... dark chocolate “Fig” Bonbons. A few new food-finds and a delicious haul from The Cheese Shop at the OC Mix. And, perfect snacks for a busy tax prep day. I’m done, are you ?... The spicy blue is “Glacier Wildfire” from Wisconsin. It’s a fairly mild creamy/crumbly blue with a nice peppery kick. Love ! Can’t wait to try it w/ steak, eggs or on a burger. The Landjägers are one of my “favorite” snacks (I even call ahead to see if they have them). They’re semi dried beef & pork sausage handmade from Germany. Love the spicy ones and they have a great snappy casing bite. Beautiful honeycomb from Temecula Valley. Inside that Cherry Oak Smoked Brisket ?! 15 lbs of savory smoky bark melt in your mouth fatty tender delicious prime beef ! My 1st “Whole Packer” was a success. Fingers were crossed and it took a little (lotta) TLC, but worth every single minute after that 1st bite ! (and 2nd and 3rd and...) We made a couple few mistakes w/ trimming & temps, but it was so much fun and such a great learning experience ! I can’t wait to try another. But... pretty darn good for the first try ? A Rainbow of Mixed Sashimi... Salmon, Yellowtail, Tuna, Octopus, Amberjack & Crab. And, guess what ?!... it was $5.61 ! One of my favorite food-finds at Mitsuwa. They have prepared sashimi for take home and a nice assortment of sushi grade fish, but... always have these little trays of fresh imperfect end cuts. Holy SMOKES ! 15 lb Prime BRISKET !!!... My 1st “Whole Packer” ! w/ Cherry & Oak while the early morn birds are chirping away !... 2nd pic is some good lookin’ bark when it hit 165F just before the wrap. This beauty was a beast and definitely a labor of love, but so much fun and... another successful sibling-smoke. We trimmed (watched a bunch of how-tos) and seasoned with 50/50 S&P and a little HC Black. It went in my @Traegergrills 250F w/ Cherry & Oak at “1am” ! and spritzed every hour ! (after first 3 hours) w/ apple cider vin/juice/water until it reached 165F. Then it’s a wrap and back in until the magic 203F. And... into the cooler for that excruciating 1-2 hour rest. I’ll have a few stories up from our 1st trimming attempt (I ‘think’ we did okay). Ginormous “3 lb” LOBSTER CLAW !!!... Have you EVER ?!... This thing is unreal ! I mean, come on. I’ve seen a few big claws at Costco before, but this one’s crazy ! We just had to get it. It might be 1/2 it’s weight in shell, but worth it already. The family’s had their photo ops, now it’s going on the grill. I can’t promise an inside pic, they’re too anxious to eat this monster claw.
