As if a long holiday weekend could get any sweeter, here’s a dessert recipe straight from our cookbook, Eat Clean Play Dirty, perfect no matter the occasion 🍋 TURMERIC + MEYER LEMON SQUARES For the crust: Preheat oven to 350 and line an 8-inch square pan with parchment paper. In a large bowl, whisk 1 ¾ cups almond meal and ½ cup tapioca flour. Stir in ¼ cup melted coconut oil and ¼ cup maple syrup, stirring until well combined. Press mixture into bottom on pan and bake until crust is lightly browned around edges, about 15 minutes. For the filling: In a medium sauce pan, whisk together ⅓ cup freshly squeezed Meyer lemon juice and 2 tbsp cornstarch until no lumps remain. Whisk in 1 cup full-fat coconut milk, ⅓ cup maple syrup, 2 tbsp coconut oil, ½ tsp ground turmeric, ½ tsp vanilla extract and the zest of ½ Meyer lemon. Bring mixture to a simmer over medium heat, stirring frequently for ~8 minutes, or until mixture thickens. Remove from heat and let cool for 10 minutes. Pour filling over crust and refrigerate for at least 3 hours, or until completely set. Once set, lift bars out of the pan, cut into 16 squares, and top each with a slice of lemon. Serve, savor and enjoy 💛 #EatCleanPlayDirty
