A chance for me to get back to my fine dining roots and share the stories behind each dish alongside my chef de cuisine Jason Beberman and pastry chef Nina Subhas. Due to the limited number of seats, we will be booking the Chef’s Counter through a lottery, chosen at random, to provide an equal opportunity for all guests to experience the tasting menu. Thai Shallots grown by @kongthao03 are the secret behind our unconventional Beef Tartare. We wanted to highlight these amazing pungent alliums and built a dish that is both familiar and challenging. Kaffir limes from @jjslonedaughter add a striking flavor that we felt paired perfectly with the intensity of the shallots. We use the shaved honeydew radish from @weiserfamilyfarms to add crunch and make a sesame-lime salt with the greens to top it all off. We love our farmers and it all starts with the produce for us here in the kitchen at Simone. 📷 @maljordan1127
Basque Cheesecake: This stunning Basque Cheesecake is the newest addition to our Dessert menu. Chef @ninasubhas has mastered the technique of baking this classic treat and pairs it with @weiserfamilyfarms Parsnips, Cara Cara Orange and sorbet made from our housemade Ricotta Whey. 📷 @maljordan1127
Matsutake Mushrooms Fermented in Pine Honey:
An idea that’s been stuck in my mind for a couple of years. It came to me on a solo hike, in a forest of California pine. I finally got around to trying this technique without knowing if it would work and I am happy to report that both the mushrooms and honey are wildly strange and wonderful.

Bruno Bagbeni, you changed my life in an extraordinary way. You believed in me before we ever met and together, you, Joe and I built a dream. You founded an idea, a restaurant, and soon it became known to the world as Simone - for Nina, for the jazz that lives inside us. 2018 has been beyond words and the loss of you is with me each day. My heart is broken but I feel your smile each service looking across the dining room, into the kitchen, just as we had always planned. Above all, you were an incredible father. Every moment was focused on being the best for your girls. Teaching them, supporting them and giving them boundless love. They are the luckiest to have had such a force as their father. Simone will be closed today. But here's a little something to get you excited for when we open up for regular business hours tomorrow. The perfect example of partnership, as Simone was being built the Russo family introduced Chef Jes to sicilian wedding soup. She loved it so much she made her homage to it for the opening menu, Pork Meatballs, Parmesan Brodo, Puffed Brown Rice and Spinaches.

Jessica Largey is working hard to empower her staff with the same confidence she holds in the kitchen. Largey tells @healthyish, "There are a lot of people in the kitchen at Simone. I’ve never worked with any of them before, and that was intentional. I tried to let go of my workaholic habits, all the pressure I put on myself, and wipe the slate clean. It’s been empowering."
The new meaty star of our produce driven menu is the @flannerybeef “Jorge” Ribeye. It’s slow cooked on our Josper Grill and served with All of the things… an array of sauces, pickles, ferments, vegetables and more, in the style of banchan. Come hungry, bring friends!
Meet our beverage director Jordan Egan. If you've dined with us at Simone you may have seen him around. Jordan hails from Chicago and brings a wealth of knowledge about all things boozy. His experience includes opening Michelin-starred RIA at the Waldorf Astoria in Chicago, to General Manager/Wine Director at Boka, and Sommelier at NoMad in New York. Fast-forward to today, Jordan spent countless hours selecting the wine list you now see at Simone and #Duello, importing bottles from across France and California.
