Our team gathered fresh lavender last week, and now it’s drying in the entrance of our prep kitchen. During the summer months, we pick numerous ingredients to dry and preserve, for use later in the year once the warmth of the season has subsided. | #lavenderparty | 📷: @charitylburggraaf + @casebase21

The reefnets are out on Legoe Bay! Sockeye and Pink Salmon are pulled out of the ocean by hand, allowed to rest in live tanks and then bled on the boat. It is then that any unwanted bycatch is released unharmed back into the sea. All of those efforts provide us with salmon of the highest quality, and we are so lucky that @lummiislandwild - one of the most sustainable fisheries in the world - is located just a mile up from our kitchen. | 📷: @charitylburggraaf

One of the most important steps to our dinner service is the creation of our expo chart. Within its matrix of tables and courses are guest notes, dietaries, wine pairings, drop plans, and right or left handed guests. Having every section of this chart correct allows us to send 850+ dishes out the kitchen to the right table at the right time. | 📷: @dmtolomei

The Willows Inn offers breakfast on mornings following dinner service from 8:30am ~ 10:30am. Expect to find warm brioche buns, house-cured bacon, local eggs and cheese, mushroom grits, and the season’s ripest fruits and vegetables from @loganitafarm. Have you tried the new Willows Beer yet? This is our third annual collaboration with @wanderbrewing, and we think it’s our most delicious one yet. Brewed with 100% @skagitvalleymalting malt - our beer is a blend of two saison yeast strains. After undergoing primary fermentation, the young beer made its way into American white oak foeders for a month, where it picked up native-wood funk and a slight, oaky acidity. Light and effervescent, experimental while highly sessionable, this beer is a testament to pushing boundaries alongside likeminded friends. With a constant focus on sustainable landscaping, Janaki Kilgore, has transformed the grounds of the Inn into lush, beautiful gardens. All around the Inn, you‘ll find unique ingredients for use by the kitchen and bar, along with thousands of bulbs and flowers that are used each day for table settings and room decorations. While @loganitafarm delivers many of our greens and produce, the foraging done by our chefs bring so many unique ingredients into our kitchen every morning. Some, like these apple blossoms, are only in season for a handful of weeks. Each year begins with training our team on responsible foraging methods to help protect our island’s resources.
