Have you tried the new Willows Beer yet? This is our third annual collaboration with @wanderbrewing, and we think it’s our most delicious one yet. Brewed with 100% @skagitvalleymalting malt - our beer is a blend of two saison yeast strains. After undergoing primary fermentation, the young beer made its way into American white oak foeders for a month, where it picked up native-wood funk and a slight, oaky acidity. Light and effervescent, experimental while highly sessionable, this beer is a testament to pushing boundaries alongside likeminded friends. With a constant focus on sustainable landscaping, Janaki Kilgore, has transformed the grounds of the Inn into lush, beautiful gardens. While @loganitafarm delivers many of our greens and produce, the foraging done by our chefs bring so many unique ingredients into our kitchen every morning. Some, like these apple blossoms, are only in season for a handful of weeks. Each year begins with training our team on responsible foraging methods to help protect our island’s resources. While things around Lummi Island are seemingly just waking up from winter, it’s an exciting and busy time over at @loganitafarm: spring is the season of soil samples and seeding flats, pruning existing plants while harvesting last year’s overwintered root vegetables. It’s also the time of year that we fertilize the grounds and prep our beds for a diversity of crops, including carefully-selected heirlooms varieties. So much work goes on behind the scenes before it arrives to the table, and we’re so grateful to be able to work with someone as gifted as our farmer @mary_liz_vonk, and her all-star team. Stay tuned! We're busy with excitement and last minute preparations in anticipation of our 2019 reopening on Friday, March 15. Our staff has spent the off-season travelling the globe, studying and collaborating with some of the world's greatest chefs. They are excited to share with you some of their new found inspiration. Dinner only reservations are now available online two weeks in advance. We just released a few seats for opening weekend that you can book now!
