If you’re trying to build your own road, don’t stop. It took me 7 years to have a break out year and that year was 2016. It started off badly, my NYC show was canceled, I lost my apartment and had to move in with my parents. But then, while working in a restaurant, ready to give up on food tv, I won 2 NY Emmy awards, got a personal invitation to the White House from @michelleobama and started working with @tastemade It’s still not easy or certain today, but it’s certainly exhilarating. Now for phase 2, to really make a difference with food waste (and thus the associated greenhouse gases) and have Struggle Meals become a truly classic and helpful cooking show.
Pasta New Yorkese, my version of Penne alla Vodka, Arrabbiata, Amatriciana and Marinara combined. I’ve named it after my city, because New York represents change and risk taking. Is it Italian? No, but it’s delicious and you should make it ASAP. Ingredients: 6 cloves of garlic, sliced 1/4c Extra virgin olive oil. Red pepper flakes 1/2c Vodka 28oz can of whole peeled tomatoes (crushed by hand) 1 pound mezzi rigatoni 6oz of Pecorino Romano, grated 4-6 slices of prosciutto Equipment: large Pot for boiling water Strainer Pot for making sauce Sheet tray with a silpat or parchment paper Steps: Bring a large pot of water to the stove, set to high and bring to a boil On a sheet tray lined with parchment paper or a silpat, lay slices of prosciutto side by side so that they don’t overlap. put them in a 375º oven for 15-30 minutes, or until crispy. In the other pan, set the heat to medium high, add the olive oil, the garlic slices, red pepper flakes and a pinch of salt, swirl the pan vigorously until the first signs of color appear, about three minutes. Remove the pan from the flame to add the vodka, it may splatter, return the pan to the heat and cook off the alcohol, about 2 minutes. At this point, lower the heat, add the tomatoes, stir. simmer for 5-10 minutes or until your pasta is ready. Add salt to your boiling water, it should taste flavorful, add in your pasta and cook them 1 minute shy of the recommended cooking time. Once the time is up, strain the pasta, add the sauce and cheese to the pasta and stir well for at least a minute. Plate 4 servings, and add a slice (or 1.5) of prosciutto on top of each bowl. #pasta #amatriciana #allavodka #arrabbiata #marinara #newyorkese #recipe
Super into steaming fish in parchment lately. Here’s some Dover sole just before I sealed it all up with another piece of paper to create a mini steam oven, with Castelvetrano olives, spring asparagus tied into bundles with spring onion and some tomatoes. A pat of butter melts over each filet. 450° for 8 min

This is the simplest of all pasta dishes - but also the one that teaches the importance of high quality ingredients and good cooking technique, because there’s nowhere to hide. Have no fear! In my story highlights I have a version of this #SpaghettiAglioeOlio with broccoli, which you can omit if you’d like. Pan Fried Pasta // remember those words! Take your leftover pasta, whatever it is - dump it in a non stick pan with 3 TBSP of olive oil. Fry until it starts to burn, then toss, wait for that burning again - add white wine or white balsamic vinegar, cook it out and serve. I added; olives, pepadews and sweet dried peppers to mine today. #panfriedpasta
